Meatloaf with Mash

Ingredients
- beef mince — 800g
- breadcrumbs — 1 cup
- eggs — 2
- onion — 1
- tomato sauce — 1/2 cup
- potatoes — 800g
- butter — 50g
Method
- Finely chop and soften onion, cool slightly.
- Mix mince, breadcrumbs, egg and onion thoroughly.
- Press into a loaf tin, brush top with half the tomato sauce.
- Bake 180°C 50-55 min until cooked through and a little caramelised on top.
- Rest 10 min before slicing — this keeps it from falling apart.
- Boil and mash potatoes with butter.
- Serve meatloaf with mash and remaining sauce warmed through.
