Fish Pie

Ingredients

  • white fish — 500g
  • salmon — 300g
  • prawns — 200g
  • potatoes — 1kg
  • milk — 2 cups
  • plain flour — 3 tbsp
  • butter — 60g
  • cheddar — 100g grated
  • frozen peas — 1 cup

Method

  1. Boil and mash potatoes with a little of the butter and milk.
  2. Gently poach fish and salmon in the remaining milk 8 min, remove and flake, reserve the milk.
  3. Make a white sauce with butter, flour and the reserved poaching milk.
  4. Fold flaked fish, prawns and peas through the sauce.
  5. Transfer to a baking dish, top with mash and grated cheese.
  6. Bake 200°C 25-30 min until golden and bubbling.
  7. Rest 5 min before serving.

Hawaiian Poke Bowls

Ingredients

  • salmon — 400g sashimi-grade
  • soy sauce — 3 tbsp
  • sesame oil — 1 tbsp
  • rice — 2 cups
  • cucumber — 1
  • avocado — 1
  • sesame seeds — 1 tbsp

Method

  1. Cook rice.
  2. Cube salmon, toss with soy sauce and sesame oil.
  3. Slice cucumber and avocado.
  4. Bowl up rice topped with salmon, veg and sesame seeds.

Salmon Teriyaki

  • salmon — 4 fillets
  • teriyaki sauce — 1/3 cup
  • rice — 2 cups
  • broccoli — 1 head
  • sesame seeds — 1 tbsp

Method

  1. Cook rice, steam broccoli.
  2. Pan-fry salmon, glaze with teriyaki sauce in the last minute.
  3. Serve over rice with broccoli, sprinkle sesame seeds.

Salmon with Potato Mash and Peas
