Ingredients

  • beef mince — 600g
  • potatoes — 800g
  • carrot — 2
  • onion — 1
  • beef stock — 300ml
  • frozen peas — 1 cup
  • butter — 40g

Method

  1. Brown mince with onion and carrot.
  2. Add stock, simmer 15 min until thickened.
  3. Boil and mash potatoes with butter.
  4. Layer mince in a dish, top with mash.
  5. Bake 200°C 20 min until golden on top.
  6. Boil peas, serve alongside.

Meatloaf with Mash

Ingredients

  • beef mince — 800g
  • breadcrumbs — 1 cup
  • eggs — 2
  • onion — 1
  • tomato sauce — 1/2 cup
  • potatoes — 800g
  • butter — 50g

Method

  1. Finely chop and soften onion, cool slightly.
  2. Mix mince, breadcrumbs, egg and onion thoroughly.
  3. Press into a loaf tin, brush top with half the tomato sauce.
  4. Bake 180°C 50-55 min until cooked through and a little caramelised on top.
  5. Rest 10 min before slicing — this keeps it from falling apart.
  6. Boil and mash potatoes with butter.
  7. Serve meatloaf with mash and remaining sauce warmed through.
