Shepherd's Pie

Ingredients

  • lamb mince — 500g
  • potatoes — 1kg
  • carrot — 2
  • onion — 1
  • frozen peas — 1 cup
  • beef stock — 300ml
  • butter — 50g

  1. Brown mince with veg, add stock, simmer.
  2. Top with buttery mash.

  • potatoes — 800g
  • carrot — 2
  • onion — 1
  • beef stock — 300ml
  • frozen peas — 1 cup
  • butter — 40g

Method

  1. Brown mince with onion and carrot.
  2. Add stock, simmer 15 min until thickened.
  3. Boil and mash potatoes with butter.
  4. Layer mince in a dish, top with mash.
  5. Bake 200°C 20 min until golden on top.
  6. Boil peas, serve alongside.

Fish Pie

Ingredients

  • white fish — 500g
  • salmon — 300g
  • prawns — 200g
  • potatoes — 1kg
  • milk — 2 cups
  • plain flour — 3 tbsp
  • butter — 60g
  • cheddar — 100g grated
  • frozen peas — 1 cup

Method

  1. Boil and mash potatoes with a little of the butter and milk.
  2. Gently poach fish and salmon in the remaining milk 8 min, remove and flake, reserve the milk.
  3. Make a white sauce with butter, flour and the reserved poaching milk.
  4. Fold flaked fish, prawns and peas through the sauce.
  5. Transfer to a baking dish, top with mash and grated cheese.
  6. Bake 200°C 25-30 min until golden and bubbling.
  7. Rest 5 min before serving.

  • sausages — 8
  • plain flour — 1 cup
  • eggs — 2
  • milk — 1 cup
  • gravy powder — 2 tbsp
  • frozen peas — 2 cups

Method

  1. Whisk flour, eggs and milk to a smooth batter, rest 15 min.
  2. Brown sausages in a hot ovenproof pan, then pour batter around them.
  3. Bake 220°C 25-30 min until puffed and golden — don't open the oven early.
  4. Make gravy, boil peas.
  5. Serve straight from the pan with gravy and peas.
