Ingredients
- beef bones — 1kg
- steak — 400g
- rice noodles — 400g
- star anise — 3
- cinnamon stick — 1
- ginger — 1 knob
- onion — 2
- bean sprouts — 200g
- thai basil — 1/2 bunch
- fish sauce — 2 tbsp
Method
- Char onion and ginger under the grill until blackened in spots.
- Simmer beef bones in a large pot of water, skimming scum, for 20 min.
- Drain and rinse bones, return to a clean pot with fresh water.
- Add charred onion, ginger, star anise and cinnamon.
- Simmer gently, uncovered, 2-3 hours to build a clear, fragrant broth.
- Season broth with fish sauce, strain out solids.
- Soak rice noodles until soft, then blanch briefly in boiling water.
- Slice raw steak paper-thin.
- Divide noodles into bowls, top with raw beef.
- Ladle over boiling hot broth — this cooks the beef.
- Serve with bean sprouts, basil, lime and chilli on the side.
